Honey & Mustard BBQ Chicken
Honey and Mustard is always a popular marinade for chicken, and this recipe is so easy!
Ingredients
- 6 chicken breasts
- 2 tablespoons of olive oil, or 125g butter if you prefer
- 1 tablespoon of fresh tarragon
- 1 tablespoon of good smooth mustard, such as Dijon
- 6 tablespoons of clear honey
Method
If you are using butter, place it in a bowl and soften with a wooden spoon. Otherwise, simply place the olive oil in a bowl. Add with the mustard and honey, and beat together with a wooden spoon.
Place the chicken breasts in a shallow dish and prick the flesh with a fork or a sharp knife.
Spread the honey and mustard marinade over the chicken pieces, making sure they are well covered. Cover and leave in the fridge, for at least 2 hours.
Grill the chicken breasts directly on the barbecue over a low to medium heat for 20-25 minutes, basting frequently and turning occasionally. Ensure that the chicken is thoroughly cooked and the juices are running clear before serving. The chicken is cooked properly when the thermometer reaches 165°
